Sugar-Free Fluffy Banana Pancakes

If you like pancakes, give these Sugar-Free Fluffy Banana Pancakes a try and you will never look back and add sugar to your pancakes.

Since my daughter was born and we started with solid foods at 6 months, I quit adding sugar to some food or desserts I was having, so that she can have them too.

Here are a few examples of foods to which I no longer add sugar and what I do add to sweeten them up:

  • Oatmeal – I add banana, dates or any kind of sweet fruit
  • Chia pudding – date
  • Rice and semolina pudding – banana
  • Banana bread – bananas
  • Carrot cake – dates
  • Mascarpone and whipping cream for the carrot cake – dates
  • Pancakes – bananas

These are a few things I make that my daughter can eat too. And to be honest, I don’t even make desserts with sugar anymore. I’m sure I will make some again, but not right now.

I make something sweet and delicious but without any added sugar and this way, they’re way healthier and my daughter can enjoy them too.

Today I want to share with you this Sugar-Free Fluffy Banana Pancakes.

If you want them to be fluffy, you need to beat the egg whites separately.

A Romanian fellow blogger told me this (@jurnaldulce, you can find her on Instagram) And she’s right. They’re fluffy and airy. And I can give them to my 1-year-old daughter without being afraid that she will choke with them.

Ingredients:

  • 2 bananas
  • 3 eggs
  • 1 teaspoon of cinnamon
  • 100 g of flour (white or whole wheat)
  • 1/4 teaspoon baking soda
  • A pinch of salt

As you can see, you need just a few ingredients. And you may probably have them already in your kitchen.

Start by mashing the bananas with a fork.

Separate the eggs. Add the eggs whites into a big bowl with a pinch of salt and add the yolks with the bananas.

Beat the whites with a hand mixer until they’re stiff.

Add the bananas and egg yolks and beat again just to incorporate them.

Add the cinnamon, baking soda and half of the flour and stir with a wooden spoon.

Add the rest of the flour and stir again slowly.

Leave the batter to rest for 30 minutes until it’s bubbly and fluffy.

Add 2 tablespoons (or how big or small you want the pancakes to be) into a greased pan and cooked them on medium heat until bubbles appear.

Flip them over and cook for 1 more minute.

Stack them up and serve them with a fresh and steamy cup of coffee, fresh fruit and a drizzle of honey or maple syrup if you want the pancakes sweeter. Or have a family member who likes the pancakes really sweet.

I like them just with fresh fruit and a cup of coffee.
