
Carrot Cake Bites
These Carrot Cake Bites are one of the easiest snack you’ll ever make. They’re satiating and filled with nutritious ingredients. Perfect for the entire family.
I’ve made these Carrot Cake Bites a few times now and they’re loved in our house. These are such a great snack. Can I even risk to say that they’re the perfect snack? I’m not kidding. They’re that good.
I believe that even when we’re snacking we can eat healthy. Of course, we all eat chocolate, but that doesn’t mean that we cannot choose a healthier option. The same goes with anything we eat. If we try to make small changes in our diet, we will be healthier.
Now for the recipe.
Ingredients:
- 50 g of rolled oats, ground
- 20 g of rasins, soaked in warm water
- 150 g of peanut butter or any kind of butter you like
- 115 g of grated carrots (2 medium carrots)
- 30 g of walnuts, chopped
- 20 g of desiccated coconut + 20 g for coating the bites
- a sprinkle of groung ginger
- 1/2 a teaspoon of cinnamon
Add all the ingredients into a big bowl.

With your clean hands, mix everything together until they’re well incorporated. The «dough» should feel a bit sticky so that you can form little bites. If it’s too dry, they’ll be crumbly.
Add more peanut butter if needed.

Form little balls to the size you want. I’ve made them quite small.

Roll each ball in coconut. Or you can roll them in cacao powder. That’s your choice.


Keep them in the fridge or freeze for later snacking.
